Ingredients

  • 1 to 1-1/2 lbs ground beef
  • 2 T flour
  • 1/2 cup chopped green or regular onion
  • 1/2 cup chopped celery
  • 1/2 t thyme
  • 1 t basil leaves
  • 1/2 t minced garlic
  • 1/2 t black pepper
  • 1/2 t salt
  • 2 t worcestershire sauce
  • 1 T ketchup
  • pinch cayenne or a few drops hot sauce
  • 1 (15 oz) can whole kernel corn, drained or 2 cups frozen corn
  • 1 cup frozen peas
  • 3 cups leftover mashed potatoes
  • 1-1/2 to 2 cups shredded cheese

Preparation

Step 1

Break gr beef into a large skillet and sprinkle the flour over it. Add the onion and celery and brown. Drain if needed. Sprinkle on thyme, basil, garlic, black pepper and salt. Add Worcestershire sauce, ketchup and hot sauce along with corn and peas. Simmer about 15 or 20 minutes. Pour into a sprayed 9x13 casserole dish. Spread mashed potatoes over top. Sprinkle on shredded cheese. Bake in preheated 400 degree oven for 25 to 30 minutes until cheese is melted and casserole is bubbling. Makes 10 to 12 servings.
