Ingredients
- SAUCE:
- 2 oz chopped onion
- 2 oz celery
- 1/2 oz olive oil
- 1/2 tsp chopped garlic
- 1 1/2 lb jumbo lump crabmeat
- 1 lightly beaten egg
- 3 Tbsp mayonnaise
- 1/3 cup bread crumbs
- 2 tsp dijon mustard
- 2 tsp Old Bay Seasoning
- 8 oz roasted red peppers
- 1 cup mayonnaise
- 1/2 cup chili sauce
Preparation
Step 1
Place saute pan on high heat, add oil. Add onions, celery & garlic & saute until tender (do not brown). Add pinch of salt and black pepper, mix thoroughly. Cool. Drain liquid from crabmeat. In mixing bowl, combine crabmeat, egg, mayo, bread crumbs, dijon mustard, pinch of salt & pepper & cooled vegetable mix (do not over mix). Cover and chill for 1 hour before forming crab cakes. Weigh out 4 oz of mix & form into 1 inch tall x 2 1/2 inch wide cake. Lightly bread on top and bottom with bread crumbs. Sprinkle top and bottom with bread crumbs. Sprinkle top and bottom with seasoning. Saute in olive oil until just brown, approx. 15 seconds each side. Bake in 350 oven for 10 - 15 minutes.
