  • 3/4 cup elbow macaroni pasta
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 1/4 cups milk
  • 1/8 teaspoon coarsely ground black pepper
  • 1/2 teaspoon salt
  • 2 1/2 cups colby cheese, shredded

Step 1

Preheat broiler to high.

Prepare the macaroni according to the packages directions.

Melt butter in a pan over medium heat. Add flour and continue whisking until bubbly. Add milk, salt, and black pepper and mix until the milk begins to bubble. Add the cheese and turn off heat. Continue whisking the sauce until cheese is melted and smooth.

Stir in macaroni and set the skillet under the preheated broiler for 2 to 3 minutes, until several brown spots appear on the surface. Remove the pan from oven and let sit for 5 minutes before serving. The cheese sauce will thicken as it sets.
