Extra Stormy Dark and Stormy
- 2 oz. Lemon-Ginger Brew
- 2 oz. dark rum
- Club soda
- Lime wedge and candied ginger (for serving)

- 8 oz. ginger, peeled, chopped
- 1/2 cup fresh lemon juice
- 1/3 cup agave syrup (nectar) or pure maple syrup

Combine Lemon-Ginger Brew and rum in a highball glass filled with ice, then top off with club soda. Garnish with lime wedge and candied ginger.
Pulse ginger in a food processor to a coarse paste. Bring ginger and 6 cups water to a boil in a medium saucepan; reduce heat and simmer until reduced to 3 cups, 30–40 minutes.
Strain into a large jar and mix in lemon juice and agave; add more lemon juice or agave, if desired. Let cool; cover and chill.
DO AHEAD: Brew can be made 2 weeks ahead. Keep chilled.
