Ingredients

  • 2

    oz. Lemon-Ginger Brew

  • 2

    oz. dark rum

  • Club soda

  • Lime wedge and candied ginger (for serving)

    oz. ginger, peeled, chopped

  • 1/2

    cup fresh lemon juice

  • 1/3

    cup agave syrup (nectar) or pure maple syrup

Directions

Combine Lemon-Ginger Brew and rum in a highball glass filled with ice, then top off with club soda. Garnish with lime wedge and candied ginger. Lemon-Ginger Brew Pulse ginger in a food processor to a coarse paste. Bring ginger and 6 cups water to a boil in a medium saucepan; reduce heat and simmer until reduced to 3 cups, 30–40 minutes. Strain into a large jar and mix in lemon juice and agave; add more lemon juice or agave, if desired. Let cool; cover and chill. DO AHEAD: Brew can be made 2 weeks ahead. Keep chilled.
