Potato and Cheddar Soup

Ingredients

  • 2 cups water
  • 2 cups peeled and cubed potatoes
  • 3 tbs melted butter
  • 1 small onion, chopped
  • 3 tbs flour
  • salt and pepper
  • 3 cups milk
  • 1/2 tsp white sugar
  • 1 cup shredded cheese

Preparation

Step 1

Bring water to boil in medium pot. Add potatoes, cook until tender. Drain but save 1 cup of liquid.

Stir in butter, onion and flour. Season with salt and pepper. Gradually stir in potatoes, saved liquid, milk, sugar and cheese. Simmer for 30 mins. Stir frequently.
