RICOTTA CHEESE CAKE

Ingredients

  • 2 lbs. ricotta cheese
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon almond extract
  • 1 cup heavy cream
  • 4 large eggs (lightly beaten)
  • 1/3 cup finely chopped almonds
  • Graham cracker crumbs

Preparation

Step 1

Butter sides and bottom of 9" springform pan. Dust with graham cracker crumbs. Preheat oven to 325 degrees. Beat ricotta and sugar until light and fluffy. Add eggs, cornstarch and almond extract. Add cream and almonds. Pour into prepared pan. Bake approximately 1 hour or until lightly brown on top. Crack open oven door and cool to room temperature (at least 2 hours). Chill and serve.
