The parchment paper is very important to use. These cookies are very sticky. Even with the paper it is best to let them cool a couple of minutes before trying to take them off the cookie sheet. If you do not like walnuts, substitute almonds.

Turbinado sugar is raw cane sugar and is often used as a substitue for brown sugar.

  • 1/4 Cup honey
  • 1/2 Cup Turbinado Sugar
  • 1 egg
  • 1 Tablespoon lemon juice
  • 1 Tablespoon fresh ground lemon rind
  • 1 Tablespoon fresh ground orange rind
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/3 cup walnuts

Step 1

Mix honey,turbinado,egg,lemon juice, lemon and orange rind together. Sift flour, soda,cinnamon, cloves,allspice, and nutmeg and combine sifted ingredients with mixture. Chill the dough for 1 hour. Use a spoon and drop about 1/2 teas. cookie dough on a cookie sheet lined with parchment paper. These will spread out when baked. The cookies get a little sticky so the parchment paper will prevent them from sticking to the pan while baking. Bake at 400 degrees for 10 minutes for a softer cookies, for crispier cookies bake for a additional 3 minutes.
