Potato, Leek, Sausage Soup

Ingredients

  • 3 Tablespoons olive oil
  • 1 chopped leek
  • 2 minced garlic cloves
  • 1/2 teaspoon black pepper
  • 1 teaspoon caraway seeds
  • 3 peeled and sliced medium-sized carrots
  • 2 cups peeled cubed potatoes
  • 4 cups finely chopped cabbage
  • 5 cups beef broth
  • 8 ounces smoked sausage cut into small cubes
  • 1/3 cup chopped parsley

Preparation

Step 1

Heat the olive oil at medium and saute the leeks until almost soft. Add the black pepper, caraway seeds, and garlic. Saute 1 minute. Add the potatoes, carrots, cabbage, and beef broth. Bring to a boil. Reduce heat to medium-low,cover, and cook for 20 minutes, or until potatoes and carrots are tender. Add the smoked sausage, and cook for 10 minutes. Add the parsley and cook about 5 minutes.
