Paula's Spicy Fried Chicken

Ingredients

  • Peanut oil, for frying
  • 4 large eggs
  • 1 cup hot sauce
  • 2 cups self-rising flour
  • 1 cup finely ground pecans
  • One 2 1/2-pound whole broiler-fryer chicken, cut into pieces
  • 2 tablespoons The Lady and Sons House Seasoning, recipe follows
  • Sweet Pecan Glaze, recipe follows

Preparation

Step 1

In a deep cast-iron skillet or heavy Dutch oven, pour oil to a depth of 2 inches; heat to 350 degrees F.

In a medium bowl, beat the eggs and 1/4 cup water. Stir in the hot sauce; the egg mixture will be bright orange. In another bowl, combine the flour and pecans.

Sprinkle the chicken with House Seasoning. Dip the seasoned chicken into the egg mixture; dredge in the flour mixture, shaking off any excess flour. Fry the chicken in batches, in the hot oil, until browned and crispy, 10 to 15 minutes. Drizzle with Sweet Pecan Glaze.
The Lady and Sons House Seasoning:

1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix the salt, pepper and garlic together and store in an airtight container for up to 6 months.
Honey Pecan Glaze:

1 stick butter
1/2 cup honey
1/2 cup pecans, chopped

To a small saucepan over low heat, add the butter, honey and pecans. Simmer until it thickens, about 10 minutes, stirring occasionally.

I was a little scared since Paula make such fatning foods, but I tell you KUDDOS to her, this was the best fried chicken I've ever made or taste. Wow my whole family was just blown away.

This was the best fried chicken I have ever tasted or made! It is spicy, but not too spicy and the glaze is absolutely incredible! I used milk instead of water for the hot sauce dredge. I will definitely be making this again! And my house smells amazing too! Even my daughter, who never eats spicy food, loved this!

This meal was so good! Easy enough for my 7 year old to help and it even tastes good warmed up in the microwave. Also instead of whole chicken pieces I used chicken breast and cut into strips. The honey glaze was a great addition to the meal. Generally my family uses BBQ sauce, honey, or ketchup to dip our chicken in anyhow. Regret: I only put in half of the hot sauce (Red Hot instead of the full cup as suggested. The hot sauce does not make the chicken hot at all next time I'm going all the way. Great Recipe!

WOW!!! my husband isn't a chicken eater and I'm not a greens eater, and I was planning salmon patties and fries for dinner until we saw the show. Don't be put off by the pecans ( like my husband was because they make the chicken, crunch and tad sweetness, now I didn't do the sauce, ( that's where he drew the line unless we have waffles than I can make it and the greens I added a little bit of sugar for just my pot, my husband had it exact and jalapeno to the dumplings. A keeper!!! BTW vanessa, you can't judge a recipe by the performance, you shouldn't even review until you fix it!!!!

The chicken was excellent!! my family all ways but honey on their chicken, but this took it to another level!!!

This chicken is the bomb!!!! It's sweet and spicy. The best. Love it!
