BOOZY MAHI MAHI

  • 2 lbs. mahi mahi fillets
  • 1/2 c. dark rum
  • 1/2 c. fresh lime juice
  • onion powder
  • 1 lemon
  • 2 tsp. dried oregano
  • pepper
  • 4 tbsp. butter

Preparation

Step 1

Arrange the mahi mahi in 9 x 13 pan. Pour rum and lime juice. Let stand in fridge 2-4 hrs.

Preheat oven to 325 F.

Pour off 3/4 of the liquid. Place a slice of lemon on top of each fillet. Sprinkle oregano and pepper on each fillet and then divide the butter and put a piece on top of each fillet.

Bake covered for 20-30 minutes or until fish flakes easily.
