Step 1

Wash quart jars in dishwasher. Boil water for removing skins. Boil tomatoes about 1 minute. Put tomatoes in cold water. Remove skins. Quarter tomatoes, remove seeds if desired. Put tomatoes in large pan and bring to a gentle boil about 5 minutes,(depends on size of pan). Put lids in water in frying pan and heat to hot. Put hot tomatoes in jar add two tablespoons lemon juice. Fill to 1/2 inch of top of jar. Screw lids on tightly. Heat water in canner to same temperature as tomatoes. Process at a boil for 55 minutes, keeping water an inch above lids. Remove jars to folded towels and let sit over night before removing lids.
