Banana Pecan Cloud Cake

Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup butter or margarine
  • 2 eggs
  • 2 cups sifted all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup mashed bananas
  • 1 teaspoon vanilla
  • 1/4 cup sour milk or buttermilk
  • 1 cup heavy whipping cream, whipped
  • 2 bananas, sliced
  • 1/2 cup chopped pecans
  • powdered sugar

Preparation

Step 1

Preheat oven to 350°F. Beat together butter and sugar until very light and creamy. Beat in eggs one at a time. Sift together dry ingredients. Combine mashed bananas, vanilla and milk. Add the sifted ingredients to the butter mixture in thirds alternating with thirdss of the banana mixture. Beat well after each addition until smooth. Pour into 2 greased and floured 9-inch round pans. Bake for 25 to 30 minuted. Cool.

Dust cooked cakes with powdered sugar. Spread bottom layer with wipped whipping cream, banana slices and chopped pecans. Top with second cake layer.
