Turkey Chili

This chili is terrific, with or without the turkey. Makes great leftovers!

Ingredients

  • 2 tbsp virgin olive oil
  • 1 medium onion, chopped
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1 tsp oregano, dried
  • 1 tsp ground paprika
  • 1/2 tsp cumin powder
  • 1 pound ground turkey breast, organic, free range (optional)
  • 2 medium carrots, diced
  • 1 medium celery, chopped
  • 4 medium garlic cloves, diced
  • 2 medium green chilies, roasted (or use 4-6 ounce canned)
  • 1/4 tsp crushed red pepper (or to taste)
  • 1 cup water
  • 1/3 cup marinara sauce (or any tomato sauce)
  • 1 medium tomato, chopped
  • 3 cans pinto beans, cooked, rinsed, drained
  • 1/2 cup chopped fresh cilantro
  • 4 cilantro sprigs (for garnish)- optional

Preparation

Step 1

Heat a large saucepan on medium-high, add oil, then onion, salt, black pepper, oregano, paprika, and cumin. Saute for 1 minute, stirring occasionally. If using ground turkey, add now; saute for 2 minutes, stirring occasionally, until mostly opaque.

Add carrots and celery and saute another 2 minutes while stirring occasionally.

Add garlic, chilies, crushed red pepper, water, marinara sauce, and tomato. While bubbling, add pinto beans, stirring occasionally. When bubbling again, reduce heat and simmer for 5 to 10 minutes. Just before serving, add chopped cilantro.

Garnish serving bowls with fresh cilantro sprigs. (optional)
