White Chocolate Raspberry Cheesecake

  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 2 eggs
  • 3 ounces melted white chocolate
  • 1 chocolate crumb crust
  • 3 Tablespoons red raspberry preserves

Step 1

Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, mix until blended. Stir in white chocolate. Pour into crust. Microwave preserves in a small bowl on high 15 secs. Dot top of cheesecake w/small spoonfuls of preserves. Cut through batter w/knife several times for swirl effect. Bake at 350F for 35-40 minutes or until center is almost set. Cool. Refrigerate 3hrs. or overnight.
