Ingredients

  • Sauce:
  • 2 - 2 Chicken breast halves, cut in half and pounded
  • - Flour, Salt, Pepper, Garlic Powder
  • 1 - 1 can Artichokes, cut in half
  • - Green/Greek Olives, pitted and halfed
  • 1/2 - 1/2 lb Sliced Mushrooms
  • 1 - 1 Red Onion, chopped BIG
  • 1/2 - 1/2 lb Shrimp
  • 1 1/2 - 1 1/2 cups Port Wine
  • 2 - 2 cups Beef Broth
  • 1-2 - 1-2 Tbs Balsamic Vinegar
  • 1 - 1 Shallot, chopped fine

Preparation

Step 1

- Dredge chicken in mixture of flour, salt, pepper, garlic powder
- Saute in butter and olive oil until browned; set aside
- Saute shallots; when soft, add broth, wine, vinegar, salt, pepper. Cook until reduced a bit (15-20 mins)
- Add sauteed chicken breasts, shrimp, onions, artichokes, mushrooms, olives
- Cook slowly until coated well with sauce and done (10-15 mins)

- Serve with pasta, orzo, or rice
