Tapioca Pudding

  • 9 cups whole milk
  • 1 cup pearl tapioca
  • 6 ex lg egg yolks
  • 1/2 teaspoon sea salt
  • 1 cup sugar
  • 1 tablespoon vanilla



Step 1

Pour 2 cups milk into heavy bottomed saucepan with tapioca and soak for 4-8 hours. Whisk in egg yolks, salt, sugar and remaining milk. Over medium heat bring just barely to a boil, this should take 15 minutes. Reduce heat and let mixture fall to a simmer another 20 minutes or so till tapioca is transparent.
