Cajun Cod

Ingredients

  • 6 large cod filets (or other white fish)
  • 2/3 C buttermilk
  • Grated zest of 1 lemon
  • 3 C Special K cereal, ground into crumbs
  • 1/4 C freshly grated parmesan
  • 1 T chopped fresh parsley
  • 1 1/2 t cajun seasoning
  • Cooking spray

Preparation

Step 1

Preheat oven to 450 F. Spray a baking sheet with cooking spray and set aside.

Pat cod filets dry with paper towels. Whisk together buttermilk and lemon zest in a shallow bowl or casserole dish. Add cod filets and turn to coat both sides. Let stand for 10 minutes.

In another shallow bowl, combine crumbs, parmesan, parsley, and cajun seasoning.

Working one piece at a time, remove cod from buttermilk mixture and shake off extra liquid. Press one side of fish into crumb mixture, making sure it's well-coated with crumbs. Place fish, crumb-side up, on prepared pan. Repeat with remaining fish pieces. Lightly spray tops of fish with cooking spray.

Bake for 10-15 minutes until fish flakes easily with a fork. Serve hot.
