Nutty Banana Bread

Ingredients

  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup sugar
  • 1/2 cup canola oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup buttermilk
  • 3 medium bananas, mashed
  • 1/2 cup walnuts, finely minced (I like to add a bit more)

Preparation

Step 1

1. Preheat oven to 350 degrees.

2. Grease a 9x5 by 3-inch loaf pan.

3. In a small bowl, mix the flour, baking soda, baking powder and salt.

4. In a medium bowl, beat together sugar, oil, eggs and vanilla until well combined.

5. Alternately add the dry ingredients and the buttermilk in three additions.

6. Gently stir in the bananas and nuts.

7. Pour the batter into the loaf pan. Bake for 45-55 minutes, until a toothpick comes out clean.

8. Let the bread cool in the pan for 5 minutes.

9. Carefully turn out the loaf to finish cooling on a wire rack.
