Ingredients
- 2 cups butter, melted
- 2 cups brown sugar
- 2 cups sugar
- 4 eggs, beaten
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 cups rolled oats
- 1 teaspoon salt
- 2 teaspoons pineapple extract
- 4 cups flour
- 2 1/2 cups chopped dried pineapple, measure after chopping
- 1/2 cup coconut flakes
Preparation
Step 1
Melt butter. Add the sugars and let cool a bit. Then add beaten eggs, baking powder, soda, salt and pineapple extract. Mix in flour. Then add chopped pineapple, coconut, and rolled oats, mix them in thoroughly. The dough will be quite stiff. Walnut sized balls. Bake at 350F for 12-15 minutes.
