Ingredients
- 1 lb Chicken Breasts
- 1 15 oz can unpeeled apricot halves in light syrup
- 6 green onions chopped, divided
- 1 1/2 tsp curry powder
- 8 oz orzo
- 2 Tbsp olive oil
- Salt & Pepper to taste
Preparation
Step 1
Prepare Orzo according to package directions; Drain. Meanwhile, heat Olive Oil in pan over medium heat. Sprinkle chicken with 1/2 tsp curry powder and salt and pepper to taste.
Cook chicken turning once, until done. Strain apricots reserving 1/2 cup of light syrup. Pour Orzo onto serving platter and lay cooked chicken on top. Add apricots and 4 chopped green onions to pan along with the syrup and remaining curry powder. Cook until heated through. Pour apricots and sauce over chicken and garnish with remaining green onion.
