Molasses Crackles

Ingredients

  • 3 sticks butter, melted
  • 2 cups sugar
  • 1/2 cup dark molasses
  • 2 eggs, beaten
  • 4 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tsp cinnamon
  • 1 teaspoon nutmeg
  • 4 cups flour

Preparation

Step 1

1. Melt butter in microwave. Add sugar and molasses and stir. Let it cool slightly. Then add eggs, baking soda, salt, cinnamon, and nutmeg; stirring after each addition. Add flour in 1 cup increments stirring after each one.

2. The dough will be quite stiff. Cover and refrigerate for at least 2 hrs.

3. Preheat oven to 350F, rack in middle. Roll the chilled dough into walnut-sized balls. Then roll in sugar. Press down a little so they don't roll.

4. Bake for 10-12 minutes. Let cool 2 minutes on sheets.
