Zucchini bread with Lemon Glaze

Ingredients

  • bread:
  • 2 cups cake flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 eggs
  • 1/2 cup canola oil
  • 1 1/3 cup sugar
  • 2 TB lemon juice
  • 1/2 cup buttermilk
  • zest of one lemon
  • 1 cup grated zucchini
  • glaze:
  • 1/4 cup sugar
  • 1/4 cup lemon juice

Preparation

Step 1

In a medium bowl, mix first 3 ingredients. Set aside.

In a large bowl, beat eggs. Add oil and sugar. Beat until well blended. Add lemon juice, buttermilk, and zest. Fold in zucchini.

Add dry mixture to wet mixture.

Pour into greased 9x5 loaf pan. Bake at 350 for 40-45 minutes.

Prepare glaze while bread is baking. Mix sugar and lemon juice together. Boil until sugar is dissolved. Pour glaze over warm bread.
