Lemon Meringue Pie

  • 1 1/4 cups sugar
  • 6 Tablespoons sugar
  • salt
  • 6 Tablespoons cornstarch
  • 2 cups cold water
  • 4 teaspoons butter
  • 3 egg yolks
  • 1/3 cup lemon juice
  • lemon rind
  • 3 egg whites
  • 1/2 teaspoon baking powder
  • 1 8-in pie crust



Step 1

Mix 1 1/4 cup sugar, 1/4 tsp. salt, corn starch, and water together. Place over low heat and add butter. Beat egg yolks and add lemon juice and rind to thickened mixture; mix thoroughly. Place in baked 8 in pie shell. Bake at 400F for 10 min. Beat egg whites with remaining sugar, baking powder and pinch of salt until stiff, but not dry. Remove from oven; spread meringue on top. Bake for 18 minutes in a 350F oven. Remove pie from oven; let ool in warm room.
