Horseradish Mashed Potatoes

Ingredients
- 3 3/4 pounds Yukon Gold potatoes, peeled and quartered
- 6 large garlic cloves (whole)
- 3 teaspoons salt
- 6 tablespoons fresh horseradish
- 6 tablespoons mayonnaise
- 3 tablespoons unsalted butter
- 3/4 teaspoon pepper

Preparation
Step 1
1. Combine potatoes, garlic, and 2 tsp salt and enough water to cover potatoes in a saucepan.
2. Bring to a boil, cover and simmer until the potatoes are tender, about 25 minutes.
3. Drain potatoes, reserving 2 1/4 cup of the cooking liquid.
4. Transfer potatoes and garlic to a large mixing bowl.
5. Beat with and electric mixer on medium speed, until blended.
6. Beat in the horseradish, mayo, butter, the remaining 1 tsp salt., the pepper and reserved cooking liquid until well mixed.
7. Serve immediately.
