Crab Cakes

Ingredients

  • Step 1
  • 5 lb Crabmeat-jumbo lump
  • 2 tbsp Chives finely chopped
  • 2 tbsp Parsley finely chopped
  • 4 tbsp Old Bay seasoning
  • 1.25 lb Potatoes cooked and mashed
  • Step 2
  • 6 each Egg whites
  • 2 tbsp White wine
  • 1 tbsp Lemon juice, fresh
  • Step 3
  • 1 tbsp Dijon mustard
  • 1 tbsp Thyme - fresh chopped
  • Step 4
  • 2 each Egg whites whisked
  • 1 tbsp Chives chopped
  • as needed Panko

Preparation

Step 1

Step 1
Pick crab meat to remove shells. Add in chives, parsley, Old Bay, and potatoes. Mix gently to incorporate.

Step 2
Whip to stiff peaks.

Step 3
Fold into crab mixture. Mold into cakes


Coating: combine chives with panko bread crumbs. Dip crab cakes into egg whites and then into panko-chive mix. Saute in a non-stick pan sprayed with vegetable spray to a crisp golden brown.
