Ingredients

  • 2 cups sugar
  • 3 eggs
  • 3/4 cup veggie oil (not canola or olive)
  • 1 teaspoon vanilla
  • 3/4 cup sour cream
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon cardamom
  • 1 1/2 teaspoons salt
  • 20 ounces crushed pineapple
  • 2 cups chopped pecans
  • 2 1/2 cups flour, packed
  • 2 cups grated carrots , packed

Preparation

Step 1

1. Grease a 9x13 pan. Beat the sugar, eggs, vegetable oil and vanilla together in a large bowl. Mix in sour cream. Add baking soda, cinnamon, cardamom, and salt. Mix them thoroughly. Add pineapple with liquid and the chopped nuts to the bowl. Mix them in thoroughly. Add the flour by half cup increments, mixing after each addition.

2. Grate the carrots. Measure out 2 cups, pack them down. Mix them in by hand.

3. Spread batter in pan and bake at 350F for 50 minutes.

4. Frost with Cream Cheese Frosting.
