Refrigerator Rolls

This is one of my "refrigerator, no-knead" roll recipes. It is not my favorite but works just fine. I have used it frequently and no one has ever complained. : )

Ingredients

  • 2 Cakes (scant TBS.) of yeast
  • 1/4 C lukewarm water
  • 1 C milk
  • 1/2 C light corn syrup
  • 1 TBS. salt
  • 2 eggs
  • 1/2 C melted shortening
  • 6 C flour

Preparation

Step 1

1. Soften yeast in lukewarm water.
2. Scald milk add syrup, and salt.
3. Add 2 C flour and beat well.
4. Add yeast. Beat eggs and add them. Blend well and add the shortening and remaining flour to make a soft dough. Knead until smooth and satiny. Place in a lightly greased bowl. Cover and put into refrigerator. Leave at least 4 hours or overnight.
5. When remove from the frig., punch down. Mold into any shape desired (I always roll 1/2 dough out into a circle then cut into crescent shapes, repeating with the other half of dough).
6. After shaped, let dough stand in warm place for an hour before molding.
7. Place dough into moderately hot oven 375 from 15-20 min.
