Pork Loin w/ Honey Mustard

Ingredients

  • 1/3 cup Bread Crumbs
  • 1/3 cup Flour
  • Ground Black Pepper
  • Sea Salt
  • 1 tsp Smoked Paprika
  • 1/8 tsp Cayenne
  • 1 tsp Garlic Powder
  • 1 cup Milk
  • 2 Eggs
  • 1 Pork Tenderloin
  • 1/2 cup Mayonnaise
  • 1 1/2 Tbsp Dijon Mustard with White Wine
  • 1 1/2 Tbsp Honey
  • 1/2 tsp Apple Cider Vinegar

Preparation

Preheat the oven to 400 degrees F. Grease a baking sheet with oil or line with foil and set aside. To make breading mixture, in a medium-sized baking dish, combine bread crumbs, flour, 2 tsp black pepper, 2 tsp salt, paprika, cayenne and garlic powder and mix until all of the ingredients have blended. Set aside. To make milk wash, in a medium-sized bowl, add milk, eggs, 1 tsp of salt and 1 tsp of black pepper. Whisk to combine and set aside. Dip the pork loin in milk wash then roll to coat the mixture on all sides. Transfer pork loin to dish with breading mixture and roll to coat the breading on all sides. Place the pork loin on baking sheet. Bake for about 30 minutes, or until it reaches an internal temperature of 145 degrees. To make dipping sauce, in a medium sized bowl, combine mayonnaise, Dijon mustard, honey, apple cider vinegar and a pinch of salt. Refrigerate to marry flavors. Once pork is cooked, remove from oven, let cool 5 minutes then slice and serve with dipping sauce.
