Ingredients
- 6 Cups flour
- 2 tablespoon baking powder
- 2 1/4 cup cocoa powder (I use half dutch half black)
- 2 1/4 cups butter, softened
- 6 cups sugar
- 12 eggs
- 1 Tablespoon vanilla
- 1 teaspoon mint flavoring
- 1 tsp salt
- confectioner's sugar
Preparation
Step 1
1. Combine flour, baking powder, cocoa and salt; set aside.
2. Beat butter with a mixer on medium speed for 30 seconds. Beat in granulated sugar until combined. Beat in eggs, vanilla and mint flavoring. Stir in flour mixture. Wrap dough in plastic wrap. Freeze 30 minutes or until firm enough to shape.
3. Preheat oven to 350F. Shape dough into 1in balls. Roll balls in confectioner's sugar. Place on cookie sheets. Bake in preheated oven 10-12 minutes. Cool 2 minutes on trays.
