Chocolate Caramel Cookies

Ingredients

  • 1 1/2 cups butter, softened
  • 1 1/2 cups sugar
  • 1 1/2 cups brown sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • 3 3/4 cups flour
  • 1 1/4 cups cocoa powder
  • 1 1/2 teaspoons soda
  • 1 1/2 cups pecans
  • 30 ounces Rolo's

Preparation

Step 1

In mixing bowl, cream butter, sugar, and brown sugar. Add eggs and vanilla; mix well. Combine flour, cocoa, and baking soda; add to creamed mixture and beat just until moistened. Stir in pecans. Shape dough by TBSfuls around each candy. Bake @ 375F for 7-10 minutes. Cool 3 min. This year I made these smaller, I used the small cookie scoop instead of the medium, and I used mini rolos instead of rolos....soooo much easier not having to unwrap all the rolos and they turned out great. One batch made 9 dozen which is about what I need for all my cookie boxes and trays.
