Chocolate Almond Biscotti

Ingredients

  • 3 cups butter, softened
  • 4 cups sugar
  • 2 Tablespoons vanilla
  • 12 eggs
  • 9 cups flour
  • 2 cups cocoa powder
  • 3 Tablespoons baking powder
  • 2 teaspoons salt
  • 3 cups almonds
  • 2 cups ground almonds

Preparation

Step 1

1. Preheat oven to 350.

2. Beat together buter and sugar until light and fluffly.

3. Add eggs, vanilla, and beat smooth.

4. In another bowl, toss together flour, ground almonds, cocoa, baking powder, and salt.

5. Add to butter mixture and lightly beat until dough is formed.

6. Gently stir in almonds.

7. On a lighlty floured surface, knead dough into 6 balls and cut in half.

8. Press each piece into a 10x4 in loaf and transfer with spatula to an uncoated baking stone.

9. Bake about 35 minutes until set and dry.

10. Cool on stone 10 minutes and transfer to board.

11. Cut with sharp knife into 1/2 inch slices across width.

12. Return to baking sheet, cut side up and bake 10 minutes longer per side.

13. Cool on racks and store.
