Ingredients
- 4 eggs
- 1 1/2 cups brown sugar, packed
- 1/2 cup butter, melted
- 1 Tablespoon lemon juice
- 2 1/4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 3 cups raw carrots, grated
- 1/2 cup raisins
- 1/2 cup walnuts, chopped

Step 1
Beat eggs and sugar, stir in melted butter and lemon juice. Combine dry ingredients and add to egg mixture. Stir in carrots, raisins, and nuts. Pour into greased and floured bundt pan. Bake at 350F for 1 hour.
