Carolina Pulled Pork Sandwich

Slow cooker pulled pork sandwich

Ingredients

  • 1 onion chopped
  • 2 cloves garlic chopped
  • 4 pound pork butt shoulder roast
  • 1 Tbs dry fajita seasoning
  • 2/3 cup ketchup
  • 1/3 cup brown sugar (dark preferably)
  • 1/3 cup cornstarch
  • 3 Tbs apple cider vinegar
  • 1 tsp salt
  • Hoagie rolls
  • 2 cups prepared coleslaw

Preparation

Step 1

Place onions and garlic at bottom of slow cooker, top with pork, sprinkle seasoning on all sides of pork.

In small bowl whisk together ketchup, brown sugar, cornstarch, vinegar and salt. Pour over pork. Cover and cook for 10-12 hours on low.

Transfer pork to plate reserving sauce in slow cooker, cool slightly. Using two forks pull pork apart and shred til fit for sandwich. Stir back into sauce. Fill buns with pork mixture and top with coleslaw.
