Penne 'Roasted Asparaus & Balsamic Butter

Variation: With Roasted Broccoli
- Cut broccoli into small spears, toss with 2 tbsp oil & 1/4 tsp each of salt & pepper & roast for 15 mins.

Ingredients
- 1 lbs Asparagus, cut into 1" pieces
- 1 tbsp EVOO
- 2 tsp Salt
- 1/2 tsp fresh-ground black Pepper
- 1/2 cup + 2 tbsp Balsamic Vinegar
- 1/2 tsp Brown Sugar
- 1 lbs Penne
- 1/4 lbs butter, cut into pieces
- 1/3 cup grated Parmesan cheese + more for serving
Preparation
Step 1
1.) Heat the oven to 400F. Put the asparagus on a baking sheet & toss with teh il & 1/4 tsp each of salt & pepper. Roast until tender, about 10 mins.
2.) Manwhile, put the vinegar ina small saucepan. Simmer until 3 tbsp remain. Stir in the brown sugar & the remaining 1/4 tsp pepper. Remove from heat.
3.) Cook the penne in salted water until done. Drain and toss with butter, vinegar, asparagus, Parmesan, and the remaining 1-3/4 tsp salt.
