  • NONSTICK COOKING SPRAY
  • 3 1/2 POUNDS SWEET POTATOES PEELED AND CUT INTO 1 INCH CHUNKS (5 MEDIUM)
  • 1/3 CUP HONEY
  • 1 LARGE EGG
  • 1/2 TSP GROUND CINNAMON
  • 1/4 TSP GROUND NUTMEG
  • 1/2 TSP SALT
  • 1 LARGE EGG WHITE
  • 1/4 TSP CREAMT OF TARTAR
  • 1/4 CUP SUPERFINE SUGAR

PREHEAT OVEN TO 350 DEGREES
SPRAY AN 8X8 CASSEROLE WITH SPRAY
COOK SWEET POTATOES IN A LARGE POT OF BOING WATER 20-25 MINUTES OR UNTIL TENDER. TRANSFER TO A LARGE BOWL AND ALLOW TO COOL SLIGHTLY. ADD HONEY,EGG, CINNAMON,NUTMEG AND SALT AND WHIP USING AN ELECTRIC MIXER. SPREAD SWEET MIXTURE INOT PREPARED DISH.

IN A SMALL BOWL, BEAT THE EGG WHITE AND CREAM OF TARTAR WITH ANELECTRIC MIXER UNTIL FOAMY. ADD SUGAR, I TBSP AT A TIME, BEATING FOR TEN SECONDS BETWEENEACH ADDITION. WHIP UNTIL FLOSSY AND STIFF PEAKS FORM, 4 TO 5 MINUTES. SPOON ONE INCH DOLLOPS ON TOP OF THE CASSEROLE. BAKE 40-45 MINUTES OR UNTIL MERIGUE IS BROWNED AND CASSEROLE IS WARMED THROUGH.
