Watermelon, Honeydew, and Cantaloupe Granitas

  • 1/4 cup(s) granulated sugar
  • 1/4 cup(s) water
  • 1/4 teaspoon(s) kosher salt
  • 1/2 cup(s) fresh basil, mint, or tarragon
  • 2 pound(s) watermelon, honeydew, or cantaloupe, cut into 1-inch pieces (about 5 cups), plus more for serving

Step 1

In a small saucepan, combine the sugar, 1/4 cup water (use an extra 1/4 cup water for honeydew and cantaloupe) and salt and bring to a boil. Reduce heat and simmer (do not stir) until the sugar dissolves, 2 to 3 minutes.
Remove from heat, add the herbs, and let cool completely, then strain into a small bowl.
In a blender, purée the cooled syrup and 5 cups melon until smooth. Strain into a metal loaf or square pan, cover, and freeze until set, about 3 hours.
When ready to serve, using a fork, scrape the surface of the melon ice to create large flakes. Transfer to glasses and serve with additional fruit, if desired.
