Oatmeal Cake with Topping

Another recipe that I have had for years and don't know who gave it to me. I don't recognize the handwriting.

Ingredients

  • Cake:
  • 1 1/4 cup boiling water
  • 1 cup oats
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 1/3 cup flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Topping:
  • 1 cup brown sugar
  • 1/4 cup canned evaporated milk
  • 1 cup cocoanut
  • 1/2 cup chopped nuts
  • 6 tablespoons melted butter
  • 1/2 teaspoon vanilla

Preparation

Step 1

Pour boiling water over oats and let stand.

Cream together both sugars and butter.

Add oat mixture and eggs.

Sift together dry ingredients and add to wet ingredients

Bake in rectangular or square pan at 350 degrees for 30-35 minutes

Mix topping and spread on cake. Set cake under broiler long enough to melt only.
