Ingredients
- 1 1/2 cups Granny Smith apple, peeled and grated
- 3 tablespoons lemon juice
- 1 1/2 teaspoons lemon zest
- 1/2 cup light brown sugar
- 2 tablespoons melted butter
- 2 tablespoons nonfat buttermilk
- 1 egg
- 1 cup white flour
- 1 cup whole wheat pastry flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon, used more
- 1 teaspoon vanilla
- 1/2 cup nuts, minced
Preparation
Step 1
1. Heat oven to 350.
2. Combine apple-lemon zest, beat in sugar, butter and egg.
3. Sift together flour-cinnamon. Make a well in the center and add apple mixture with vanilla and nuts. Stir just until combined. Spread into sprayed bread pan.
4. Bake 50 minutes, or until tester tests clean. COol in pan 10 mins, then cool out of pan on rack 30 minutes before slicing.
Notes: Made these as muffins with a few substitutions -
Original recipe: 4 tbsp melted butter (no buttermilk), all AP flour, less cinnamon
Added almond extract also. Used almonds for the nuts, which I toasted first. Topped with demerrera sugar.
