Indian Mango Chutney

Ingredients

  • 1 T vegetable oil
  • 2 t fresh ginger finely minced
  • 2 cloves garlic finely minced
  • 2 red jalapeños minced
  • 2 t cumin seeds
  • 1/4 t ground turmeric
  • 1/4 t ground cardamon
  • 1/4 t ground cloves
  • 1/4 t ground cinnamon
  • 1/2 t extra hot indian chili powder
  • 1/4 t salt
  • 4-5 mangos, peeled and diced
  • 2 C white granulated sugar
  • 1 C white vinegar

Preparation

Step 1

In a medium stock pot heat oil over medium high heat. Sauté the ginger, garlic and jalapeños until fragrant and then add spices and sauté for a minute or two. Add the mangos, sugar, salt and vinegar and stir to combine. Bring to a rapid boil for reduce to a simmer. Simmer for 1 hour stirring occasionally.
