Ingredients
- 1 T vegetable oil
- 2 t fresh ginger finely minced
- 2 cloves garlic finely minced
- 2 red jalapeños minced
- 2 t cumin seeds
- 1/4 t ground turmeric
- 1/4 t ground cardamon
- 1/4 t ground cloves
- 1/4 t ground cinnamon
- 1/2 t extra hot indian chili powder
- 1/4 t salt
- 4-5 mangos, peeled and diced
- 2 C white granulated sugar
- 1 C white vinegar
Preparation
Step 1
In a medium stock pot heat oil over medium high heat. Sauté the ginger, garlic and jalapeños until fragrant and then add spices and sauté for a minute or two. Add the mangos, sugar, salt and vinegar and stir to combine. Bring to a rapid boil for reduce to a simmer. Simmer for 1 hour stirring occasionally.
