Ingredients

  • 1-1/4 cups buttermilk
  • 1 stk butter, melted
  • 2 eggs
  • 1-1/2 cups cornmeal
  • 1 cup flour
  • 2-1/2 tsps baking powder
  • 1 tsp salt
  • 1/4 cup finely diced green peppers
  • 1/4 cup finely diced red peppers
  • 1/4 cup chopped green onions
  • 1 4 oz. can chopped green chiles, drained

Preparation

Step 1

Preheat to 350; spray 9" square baking dish

Combine buttermilk, butter and eggs in large bowl; beat with electric mixer on medium until smooth - 2-3 min.

Combine cornmeal, flour, baking powder and salt in bowl; mix well; add cornmeal mixture and buttermilk mixture; mix just until combined

Add green and red peppers, green onions, and chilies to batter; stir gently to combine; spread batter into dish

Bake 20-30 min until toothpick in center comes out clean
