Ingredients

  • 2 lbs. ground venison
  • 1/2 lb. ground pork sausage
  • 1 cup bread crumbs
  • 1 cup oats
  • 1 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup cubed cheddar cheese
  • 1/2 cup ketchup
  • 1/2 tsp. garlic powder
  • 1 T. parsley
  • 1 egg, lightly beaten
  • Salt
  • Pepper
  • 1 tsp. Worcestershire sauce
  • 1/4 cup honey
  • 3 slices bacon

Step 1


Mix venison and pork. Add bread crumbs, oats, diced onion, green bell pepper, cheese, ketchup, garlic powder, parsley, egg, salt, pepper, Worcestershire sauce and honey; mix well. Form loaf and place in loaf pan. Top with bacon. Drizzle additional honey on top. Put in smoker until done, using meat thermometer for doneness. Can use apple or hickory or your favorite smoking wood.
