Smashed Dijon Potatoes

Ingredients

  • 1 lb red skinned potatoes, cubed
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp Dijon mustard
  • 1 Tbsp grated Parmesan
  • 1/2 tsp kosher salt

Preparation

Step 1

Cook potatoes in a pot of boiling water until fork tender, 12 - 15 minutes. Drain potatoes and return to pot. Cook potatoes over medium heat, stirring, to remove excess moisture, 1 minute or so. Crush potatoes with a potato masher. Stir in oil, Dijon, Parmesan, and salt until well combined.
