Mushroom Crusted Quiche
- 5 Tbsp. butter
- 1/2 lb. mushrooms coarsley chopped
- 1/2 cup finely crushed saltine crackers
- 3/4 cup chopped green onion
- 2 cups shredded montery jack or swiss cheese
- 1 cup cottage cheese
- 3 eggs
- 1/4 tsp. cayenne pepper
- 1/4 tsp paprika
Preheat oven to 350
Grease 9" pie pan
Over medium heat melt 3Tbsp butter in saute pan and add mushrooms cooking until limp. Remove from heat and stir in crackers. Mix well and turn into greased pie pan, pressing mixture over bottom and up sides.
In same saute pan melt rest of butter and add green onion cooking until soft. Spread onion over mushroom crust. Sprinkle evenly with shredded cheese. In a blender whirl cottage cheese,eggs and cayene pepper until nice and smooth. Pour over crust. Sprinkle with paprika.
Bake at 350 for 25 minutes. Let stand 10-15 before cutting.
