Ingredients

  • 2 eggs
  • 2 tablespoons unsweetened almond milk
  • 1/2 medium bell pepper, diced
  • 2 green onions, chopped
  • 1 cup fresh mushrooms
  • 1/2 cup diced tomatoes (optional)
  • no-salt seasoning blend (to taste)
  • 4 ounces spinach, chopped
  • fresh ground pepper (to taste)

Preparation

Step 1

Beat eggs with almond milk.
Heat 1/8 cup water in a saute pan and add the peppers, onions, tomatoes, mushrooms, and no-salt seasoning blend. Saute the vegetables until tender and most of the water is cooked out. Add spinach to wilt.

Add egg mixture and scramble until cooked through.
Season with black pepper.
