Twice Baked Potato Casserole

Ingredients

  • fresh cooked bacon, chopped
  • 4 sticks butter softened
  • 16 oz sour cream
  • 16 big baking potatoes
  • oil
  • S&P
  • seasoned salt
  • green onions (optional)
  • "a couple of" cups of shredded cheddar jack
  • milk (until moist)
  • large casserole dish

Preparation

Step 1

In bowl put in butter and sour cream
The bake potatoes, coated in oil, for 1 hour at 400 degrees
Cut potatoes in half
Hold each half in hand with a towel, and scrape into bowl with a house tablespoon. Some skin in the mix is no big deal.
season with salt, pepper and seasoned salt
add bacon
green onions
add cheese and milk
Mix with potato masher

put in dish, smoothe out the top

sprinkle more cheese on top

bake 30 min at 350/ until warmed through
