Saint Louis Salad

Ingredients

  • 3/4 c. olive oil
  • 1/2 c. red wine vinegar
  • 2 cloves garlic, minced
  • 1/3 sm. red onion, grated
  • 4 oz. pimentos, chopped
  • 1 med. head lettuce
  • 1 med. head Romaine
  • 1 c. artichoke hearts, drained, halved
  • 1 med. red onion, sliced thin,
  • 4 oz. pimentos, chopped
  • 1/2 - 3/4 c. grated fresh Parmesan cheese

Preparation

Step 1

Tear Romaine and head lettuce in bowl, add pimento, red onion and artichoke hearts. Sprinkle with Parmesan cheese. Pour dressing over all and toss thoroughly. Chill 15-20 minutes before serving.

Combine olive oil, red wine vinegar, garlic cloves, grated red onion and shake or blend. Make several hours in advance.
