kinda smashed garlic clove
a few slices of whatever hot pepper you prefer
bay leaf (optional)

Boil the mixture (first three ingredients) for about a minute. Process for 10 min. Then turn off the stove and let them rest in the pot for 5 more min before I take them out and let them rest on the counter for 24 hours. I've heard that they should sit for at least a few days before eating, but I can never wait that long and they are always great right away. I don't have a pressure canner so this recipe is for just a plain old canning pot and boiling water.
