Paleo Almond Joy Bark

A classic take on the famous candy bar. Make sure that if you add almonds to this that you chop them very small as you have to freeze the bark.

Ingredients

  • 1 cup coconut oil, softened
  • 1/2 tsp pure vanilla extract
  • 1 tsp pure almond extract
  • 1/2 tsp coconut extract *optional
  • 3 Tbsp shredded coconut, chopped, or as much coconut as you like
  • 3 Tbsp mini chocolate chips or dark chocolate shavings, or as much as you like
  • pinch sea salt
  • Optional 2 Tbsp chopped almonds - Make sure you chop them small as you freeze the bark

Preparation

Step 1

1. Place all ingredients in a medium bowl and mix to combine.

2. Pour the mixture onto a parchment lined baking sheet and spread evenly with a spoon.

3. Freeze until hard. Break into pieces. Store in an airtight container in the freezer, for up to 1 month.
