Freezing Cream Corn

Ingredients

  • 8 c corn
  • 1 c water
  • 1 stick butter
  • 2 Tb sugar
  • 1 tsp sea salt

Preparation

Step 1

Cut corn from cob using corn cutter. Scrape each cob with back side of a knife to remove milk from the cob.

Mix together all ingredients, cover and bring to a boil, watching closely with occasional stirring. Simmer 5 minutes , stirring occasionally, and use a potato masher while cooking to bring out more cream from the corn.

Cool in water and ice bath and package for freezer.
