Colin Cowie's Citrus Vinaigrette
Serve on poached or grilled fish such as salmon, cod, or sea bass.

Ingredients
- 1/4 c white wine vinegar
- 1 T Dijon mustard
- 1 T chopped shallots
- 1/4 t salt
- 1/4 t freshly ground black pepper
- 1 c EVOO
- 1 t orange zest
- 2 T fresh orange juice (or lime or grapefruit)
- 1/4 t crushed red pepper
Preparation
Step 1
In a small mixing bowl, whisk together vinegar, mustard, shallots, orange zest, juice, red pepper, salt, and pepper. Slowly whisk in oil.
